- In India
beverage industry comprise of carbonated or
aerated soft drinkd , fruit juices, fruits squashes, syrups etc.
Most of the fruit based beverages are canned or bottled. Carbonated
beverages containing no fruit juice or pulp occupy the major
market share . However the past decade the tetra pack aseptic
packing system convenient single shot packing has revolutionized
the fruit juice beverages market, expanding the market at rapid
rate.

- India is endowed with many varieties of fruits. The agro-climatic
conditions of In India are extremely suitable for growing
varieties of Fruits. Such as such as apple, pineapple, pear, peach
plum, almond, walnut, citrus, mango, raisin grapes, lichi, etc.

making fruits juices. The fruit beverages market is dominated by
mango based ready to serve beverages followed by apple, pineapple, guava
and orange .Beverages containing 100% fruits juice , with Natural color
, flavor and without chemical additives are being preferred internationally.
The
most important steps in processing fruits juice are selection and
preparation of fruits , extraction of juices , deaeration, staining
, filtrations, clarification, preservation. The
quality of the juice will depend on the manner in which these
several process are carried out. The best juice is , therefore
extracted from freshly, picked, sound and suitable verities when
they are at the optimum stage of maturity .
The Beverages may be classified
according to the way the they are processed. When these beverages are
produced by yeast fermentation ,the product contain raying amount of alcohol.
Grape wine, apple ciders, berry wines etc are typical examples of this
kind of beverages, you may also define them according to its nature ,
alcoholic beverages non alcoholic Beverages.

Whisky |
- One of the most popular types of
distilled alcoholic beverages is Whisky. The whisky is produced
from by mashing the grains. This whisky is manufactured by
microbial fermentation and subsequent distillation of -mash
containing up to 50% ethyl alcohol.

- The fermentation process, which
usually lasts 3 to 5 days for Whisky, uses yeast to convert the
grain sugars into ethanol and carbon dioxide. The distillation
process separates and concentrates the alcohol from the fermented
grain mash. Different grains are used for different varieties,
including barley, malted barley, rye, malted rye, wheat, and
maize. This distilled product is transferred to the wooden
cylinder to provide flavor, color, and aroma. This process is
known as aging. Whisky is produced in most grain-growing areas.

- When this alcoholic beverage is
distilled from fermented molasses, this is referring to as Rum The
molasses actually produced by boiling the sugarcane juice.

sugar cane juice is concentrated by continuously heating so as to
make it thick promotes the crystallization of the sugar.

quality of molasses depends on the maturity of the sugar cane, the
amount of sugar extracted, and the method of extraction so do the
quality of Rum .

In actual, all the alcoholic beverage
are produced by the distillation process , a process of separating
the components in a liquid by heating it to the point of vaporization,
then cooling so it condenses into a purified form, from the fermented
material .
This fermented material may change from
place to place depending upon the availability of raw material such as
fenny - a popular drink in Goa obtained
from the excessive distillation of yeast-fermented cashew apple juice.
Vodka is produced from the distillation of fermented potatoes.

the site according to the availability of raw material depending upon
product you are going to manufacture, seek advice for the selection of
machinery according to the the size & scale and the production
capacity of your plant .
