Wine is made up by fermentation of grape juice with the help of yeast.Fermatation actually is a process that convert the sugar to alcohol. During fermentation yeast interact with sugars in the juice to create ethanol, commonly known as ethyl alcohol, and carbon dioxide (as a by-product).

The quality of wine will depend upon the quality of grapes & the yeast used  This entire processed is to be taken in absence of air, under control temperature so that yeast can grow .

Any addition of air can entirely change this chemical process .So it is important that fermentation vessel should be perfectly tight , & thoroughly cleaned and sterilized.  When the fermentation starts you will find the bubble of air releasing CO2 . When you find that there is no gas indicate that the fermentation is complete.

 

This process takes two to three weeks, depending upon the skins of the grape are included in the grape juice .When the skin of grapes is in red wine red grape wine . The grapes in India in available in number of verities such as Bangalore Blue, Thompson Seedless and Arka Kanchan.

 

Graps are grown in Maharashtra , Andhra pradesh ,Himachal Pradesh & Uttatar Pradesh.In maharashtra  Nasik, Sangli, Ahmednagar, Pune, Satara, Solapur and Osmanabad are rich in grapes production & with in excellent in quality. This is the reason  why the most of exporter are from this locality .

In Uttar Pradesh , Rajasthan , Madhya Pradesh Bihar Orissa ,Punjab & Chandigarh  the liquor sale is by auction System.

In Tamil Nadu , Andhra Pradesh Kerala & Delhi the liquor is controlled by the State Government .

Where as in Jammu and Kashmir , Maharashtra, Goa , West Bengal Meghalaya, Tripura Arunachal Pradesh and Assam the area are open for sale.

The total annual consumption of wine in India 375,000 cases . Nearly 90% of wine consumed here is from the Domestic market. Only 10% wine consumed here is Imported from various Source.
